My mother use to make these cookies when I was a child. I just made an updated version and made them ”sandwich style” served with vanilla ice cream and raspberry vinegar sauce. With a delightful balance of crispy, caramel almond flake cookies, vanilla ice cream and vinegar raspberry sauce this dessert is heavenly and will seriously knock your socks off. A perfect dessert for 4th of July!

Delicious Almond Flake Cookies With Raspberry Balsamic Vinegar Sauce - Sandwich Style, Served With Vanilla Ice cream

Ingredients
- Almond flake cookies
- 1/2 cup (100 ml, 1 dl) Flaked almonds
- 3,5 tbsp (50 g) Butter
- 3,5 tbsp Sugar
- 1 tbsp Honey
- 3 tbsp Almond flour
- Raspberry Vinegar Sauce
- 3/4 ( about 200 ml, 2 dl) Frozen raspberries
- 3 tbsp Sugar
- 2 tsp Balsamic Vinegar
Instructions
- Preheat the oven to 390 Fahrenheit (200 Celsius)
- In a saucepan melt the butter
- Stir in the almond flour, sugar and honey
- Let boil while, stirring constantly for 1 minute
- Stir in the almond flakes
- Line 1-2 baking sheets with parchment paper or use a non-stick muffin pan or similar.
- With a tablespoon click the batter thinly on the baking paper (approx. 3-4 cookies on each baking sheets.) or in the muffin pan. I made my cookies in a non-stick small quiche/tart pan
- Bake cookies in middle of oven until barely browned and moist in center, 10 to 15 minutes
- Cool 5 minutes on sheet
- Loosen the cookies with a spatula and transfer to a rack for required cooling
- Raspberry Vinegar Sauce
- Place frozen raspberries, sugar and vinegar into a sauce pan. Stir to combine.
- Heat over medium heat until bubbling.
- Reduce heat and let simmer for a few minutes
- Crush raspberries with a spoon until pureed
- Assemble the sandwich
- Place half of the cookies face down
- Place one piece of ice cream on each of the cookies
- Add some raspberry vinegar sauce on top of the ice cream
- Top with remaining cookies
- Garnish with fresh blueberries, raspberries and serve
Notes
- If you can´t find almond flour you can always make it yourself, super easy!
- Peel the almonds or buy already peeled blanched almonds
- Place the almonds inside a food processor and pulse until you get a fine, grainy consistency.
